We offer a number of courses for ICA members and non members, alternatively there are a number of our members and organisations offering training opportunities.
Online Training Courses at low cost available now for ICA members
We have recently linked up with an online training company called Advanced Food Safety Limited.
- Food Hygiene Training Level 2 course at £16.50 plus VAT per person
- HACCP Training Level 2 course at £19.00 plus VAT per person
This will include the exam and certificate on passing the online exam. Certificates are posted out to you by Advanced Food Safety Limited company. The certificates include a hologram and certificate number to prevent fraud along with the Ice Cream Alliance’s logo.
This training is acceptable to Environmental Health and BRC auditors. The courses are CPD certificated.
This is very competitively priced for full Level 2 certificated courses.
Your course data can be accessed for approximately 3 years from the date of enrolling, this is even after the final exam has been taken (which can only be attempted once).

Basic Recipe Course

Learn about ice cream from start to finish and the impact of individual ingredients and processing. Our courses will give you the platform to learn more about ice cream and by the end of the course, you will be equipped with a better understanding of ice cream and why we do certain things. The course will end with, if time allows, an open forum enabling delegates to bring to the table any problems or queries that they have encountered. The ICA's consultant, Jean Pearce's knowledge and extensive experience in the ice cream industry will be able to provide you with the information you need.

Recipe Formulation Course
The next 'Recipe Formulation Course' is TBC.

This course will show how ice cream recipes are built and the reasoning behind using certain products, the quantity used and how to achieve a balanced recipe giving a robust end product. If there is something specific in your recipe, then remember to bring the specification with you. A laptop with Excel must be brought to the course, and you need to be proficient in the use of Excel.

ICA Ice Cream Training Courses
Improving your knowledge and skills can greatly contribute to making top quality ice creams and the ICA offers training courses on such subjects as ingredient functionality and product formulation. Our training courses are completely independent of any ingredient and equipment suppliers and therefore offer totally impartial help. As a not-for-profit organisation our course fees are kept to the bare minimum needed to cover our costs with most taking place at our offices here in Derby.

Free “Introduction to Gelato” demonstration days ideally suited to newcomers to the world of ice cream. RSS Hereford use their range of Telme/Valmar equipment to show you how to make artisan ice cream/fruit ice and how they can help you to make your own. This is a ‘hands on’ informal group demonstration where you will have the opportunity to discuss, ask questions and sample the end product plus gain valuable hints on what you need to operate a successful ice cream parlour.

Antonelli is pleased to offer a selection of ice cream training courses held at the purpose built Antonelli Gelato Academy. Our courses range from helping you to decide if you want to start an ice cream business for novice ice cream makers, to bespoke and specialist courses for the more advanced gelato maker. The courses are designed for small groups to enable question asking and interaction within the group. The Antonelli Gelato Academy has all the equipment and tools you would find in a gelateria and space for gelato making demonstrations as well as providing hands on courses for specific training requirements.
