ICA Training Courses

We offer a number of courses for ICA members and non memebers, alternatively there are a number of our members and organisations offering training opportunities.

Online Training Courses at low cost available now for ICA members

We have recently linked up with an online training company called Advanced Food Safety Limited.

  • Food Hygiene Training Level 2 course at £16.00 plus VAT per person
  • HACCP Training Level 2 course at £19.00 plus VAT per person

This will include the exam and certificate on passing the online exam. Certificates are posted out to you by Advanced Food Safety Limited company. The certificates include a hologram and certificate number to prevent fraud along with the Ice Cream Alliance’s logo. 

This training is acceptable to Environmental Health and BRC auditors. The courses are CPD certificated.

This is very competitively priced for full Level 2 certificated courses.

Your course data can be accessed for approximately 3 years from the date of enrolling, this is even after the final exam has been taken (which can only be attempted once).

Recipe Formulation Course

The next 'Recipe Formulation Course' is planned for Tuesday 19th September 2017 from 9:30am-2pm at the Head Office in Derby.

This 'Recipe Formulation Course' will show how ice cream recipes are built and the reasoning behind using certain products, the quantity used and how to achieve a balanced recipe giving a robust end product.
An open mind and personal laptop with Excel are essential for each delegate to get the most from the course. If there is something specific in your recipe, then remember to bring the specification with you.

Cost:

  • £150 + VAT for ICA Members
  • £190 + VAT for Non Members

SALSA accreditation training now available for ICA members.

Background

SALSA (Safe and Local Supplier Approval) accreditation has been developed as a food-safety standard written by experienced food safety experts to reflect both the legal requirements of producers and the enhanced expectations of 'best practice' of professional food buyers. It is seen as a way to provide affordable food safety assurance certification and support for small and micro businesses in the United Kingdom, especially for those businesses where BRC is seen as a step too far.

The SALSA audit takes place in one day over a 4 to 5 hour period. Suppliers need to register with SALSA and the actual audit cost is £555.00 plus VAT. SALSA also offers a mentoring facility which costs £370.00 plus VAT per day and would involve a mentor attending a supplier’s site to perform a gap analysis against the standard. SALSA do offer one day training courses but these only cover HACCP training or Labelling training and these typically cost £175.00 plus VAT each. 

Course

Provides a 5 day training course covering the SALSA food-safety standard. Each day will cover specific areas within the standard, detailing how to satisfy the requirement from both a document and implementation perspective. A preliminary outline of each day as an example is given below:

  • Day One – Overview of SALSA and related costs; The Food Safety Management system and HACCP and what this should look like and include; Quality Policy; Organogram; Site Plans; Document format and control; Procedures and Work Instructions; Process and finished product specifications.
  • Day Two – Labelling; Control of Raw Materials; Stock Control; Product Shelf life; Traceability.
  • Day Three – Training; Personal Hygiene; Cleaning; Cross-contamination.
  • Day Four – Environmental and Process Control; Equipment; Waste Control; Maintenance; Pest Control; Third Party Storage and Distribution.
  • Day Five – Non-conformance; Complaints; Product Recall; Internal Audit.

The training would be delivered in a class room/meeting room style with full colour presentation and supported handouts to prepare delegates after each day to go back to their respective businesses so that they can start to work on reviewing their own systems ready to comply with that particular part of the SALSA standard.

Due to the highly interactive element of each training day, a maximum of 6 delegates is suggested so that those taking part can have ample opportunity to discuss their specific business needs with the trainer. Delegates would need to sign up and be paid up for all 5 days of the course and each day would need to be fully subscribed.

Location would be at the Ice Cream Alliance Head Office in Derby who will provide meeting room facilities such as projector, tea & coffee and lunch.

Delegates who attend would be expected to have some form of Food Safety Training already in place and HACCP training would be desirable but not essential. They would also be expected to bring along their companies Food Safety Management System and HACCP Manual so that any specific questions they have from their own business can be reviewed in context.

The cost to each delegate would be £185.00 plus VAT per day and thus the 5 day course would total £925.00 plus VAT per delegate. These discounted rates are only available for ICA members. The non-members rate for the five days is £1085.00 plus VAT.

ICA Ice Cream Training Courses

Improving your knowledge and skills can greatly contribute to making top quality ice creams and the ICA offers training courses on such subjects as ingredient functionality and product formulation. Our training courses are completely independent of any ingredient and equipment suppliers and therefore offer totally impartial help. As a not-for-profit organisation our course fees are kept to the bare minimum needed to cover our costs with most taking place at our offices here in Derby.

Run occasional 1 day courses covering the basics of ice cream formulation and manufacturing including presentations and ‘hands on’ sessions using items of equipment from their portfolio. Course content particularly useful for farm based producers.

RSS Hereford - ICA Member

Free “Introduction to Gelato” demonstration days ideally suited to newcomers to the world of ice cream. RSS Hereford use their range of Telme/Valmar equipment to show you how to make artisan ice cream/fruit ice and how they can help you to make your own.
